Hi everyone. So live in Texas and let me tell you we have had a very confusing winter this 2019-2020 year so far. It is late January and we are having temperatures ranging everywhere from the low 40°F to the low 70°F. Seriously could we stick to one, please!
Anyway, this morning was one of those in the lower range. The house was cold and I felt like having something to warm me up in the morning. This recipe for my Blueberry & Banana Oatmeal is super easy and best of all you can leave cooking in a slow cooker of oven while you get ready for your busy day.

Pre-heat your oven to 375° or turn your slow-cooker on to the medium setting.;;Step 2. Mix together oats, cinnamon, brown sugar, salt and almonds and set aside.;;Step 3. Lightly mash the bananas (I like to leave some chunks of whole banana for added texture), and combine with milk, honey coconut oil and vanilla extract.;;Step 4. Pour the wet ingredients into the dry and mix well. The consistency will be slightly thicker. ;;Step 5. Gently stir in the blueberries (Tip: coat the blueberries in a little bit of flour to help keep them from sinking to the bottom of the batter).;;Step 6. Bake for 30-40 (either method) and coat with fresh blueberries and your favorites toppings such as banana slices, honey, a dollop of greek yogurt to get extra fancy. ;;Step 7.
